Prawns Biryani (For 8 People)

Ingredients to prepare prawns

  • Prawns - 1 ½ pounds
  • Curd – 3 teaspoons
  • Chillie powder – 3 teaspoons
  • Turmeric powder – ¼ teaspoons
  • Curry powder – 1 ½ teaspoons
  • Garlic – 3 – 4
  • Cashew nuts – 10 – 12
  • Salt – 1 teaspoon
  • Big onions – 3
  • Red onion – 6 (chopped)
  • Curry leaves
  • Rampe – 2 inch piece
  • Cardamom – 10
  • Cinnamon – 2 inch piece
  • Small tomatoes – 3


Steps to prepare the prawns

1.     1. Put 3 teaspoons of curd, chillie powder, curry powder, salt, chopped garlic ginger cashew nuts and prawns to a pan and mix properly.
2.      Put 3 teaspoons of oil in to a pan and heat, when the oil is boiling add onion, curry leaves and other spices and fry. When onion becomes golden color, add the prawn mixture to this. Cut the tomatoes in to small pieces and add. Fry this for 4-5 minutes and keep aside.

Ingredients to prepare rice

  • Rice – 1 pound
  • Red onion (sliced) - 4 ounce
  • Curry leaves
  • Cloves – 5 seeds
  • Oil – 4 teaspoons
  • Cardamom – 5 seeds
  • Cinnamon – 2 inch piece
  • Rampe – 2 inch piece



Steps to prepare the rice

1. Put oil into a pan and boil, then add curry leaves, red onion, spices and fry until onion becomes golden color. Wash the rice properly, drain the water and add. Add water accordingly to the rice amount.

2. When the rice is half cooked, add the prawn mixture to the rice and close the pan with a lid. Seal the edge of the pan stopping air flow in and out of the pan. Keep this in the oven on 300 F temperature for 30-45 minutes.

Chicken Biryani - 2 (For 8 People)

Chicken Biryani - 2 (For 8 People)

Ingredients to prepare the chicken

  • Chicken - 2 ½ pounds (Cut in to small pieces).
  • Curd – 3 teaspoons
  • Garlic – 3-4, sliced ginger pieces – 2, Cardamom seeds – 5-8 [Grind these together]
  • Red onion pieces – 2 ounce
  • Rampe – 2 inch piece
  • Cinnamon – 2 inch piece
  • Sliced tomato – ½ cups
  • Water – ¼ cups (if necessary)
  • Curry powder – 1 teaspoon
  • Salt
  • Big onion slices – ¼ pounds
  • Curry leaves
  • Chopped cardamom seeds – 6-8
  • Cloves
  • Oil – 3 teaspoons


Steps (First cook the chicken)

1. Cut the chicken into small pieces, wash properly and drain the water. Put all the grinded ingredients, curry powder, curd and salt to the chicken and mix. Keep the mixture for 20 minutes.

2. Put the oil in to a pan and heat, when the oil is boiling add curry leaves, red onion slices, cardamom and cloves and fry. Fry this until the onion slices become golden colour.

3. Add the chicken mixture to this. Fry for some minutes. Add the tomato pieces, add water if necessary close the pan with a lid and keep until the meat is properly cooked.

Ingredients to prepare the rice

  • Rice – 2 pounds
  • Curry leaves
  • Rampe – 2 inch piece
  • Spanish turmeric powder – ¼ ounce
  • Oil – ¼ ounce
  • Cardamom seeds – 10 – 15
  • Cinnamon – 2 inch piece
  • (This cardamom and cinnamon should be chopped and tie in small clean piece of cloth. This should be added to the rice)


Steps to prepare the rice

1. Wash the rice properly. Put the oil into a pan and when oil is boiling add rampe, curry leaves, onion and fry until it becomes golden color. Add the washed rice and fry for 5-7 minutes.

2. Add 8 cups of water and put the cloth tied with cinnamon and cardamom earlier.
Cook the rice properly and then add the chicken pieces. Add small amount of spanish turmeric powder in to the middle of the rice. Close the pan with a lid and seal it (Sealing the pan will stop flowing the air in and out of the pan). Keep the oven inside the oven for 30 – 45 minutes.

Rice Recipes

Chicken Biryani (For 8 People)

Ingredients
  • White rice -  1 ½ pounds
  • Salt – 1 ½ tea spoons
  • Curd – 3 ounce
  • Water – 16 – 24 ounce
  • Cumin seeds – 3 tea spoons
  • Cloves – 8
  • Cinnamon – a piece around 2 inches
  • Wild mangos teen – 1 teaspoon dissolved in water
  • Chicken or Mutton – 1 pound
  • Onion – 4 ounce
  • Garlic – 4-6 pieces
  • Ginger – a piece around 1 inch
  • Turmeric powder – ¼ tea spoon
  • Cardamom – 6-8
  • Oil – 3-4 ounce


Steps

  1. Wash rice properly. Cook the rice for 15 minutes.
  2. Cut the meat in to 1 ½’ inch pieces and put them in curd and cook for 20 minutes.
  3. Grind the onion and all the other ingredients except cloves, cardamom and cinnamon.
  4. Put the oil in to a pan and boil, then add onion pieces and fry them until it becomes golden brownish color. Add chicken pieces and other ingredients and fry them until it becomes brownish color.
  5. Add the rice to the mixture (water should be drained from rice) and fry for 2 minutes. Add hot water to the rice and cook until the rice is properly cooked.
  6. When the rice is about to be finish cooking add wild mangos teen 1 tea spoon inside the rice and further cook it with small amount of fire for 4 minutes.
