Fried Rice

Special Fried Rice

Ingredients: (For 8 people)

  • Well cooked rice 700g
  • Sliced bacon 100g
  • Boiled and sliced chicken 100g
  • Boiled and sliced prawns or crabs 100g
  • If needed (Sliced cabbage, leeks, carrot, celery, big onion & tomato) 100g each
  • Eggs 2
  • Tomato sauce 2 table spoons
  • Soya sauce 2 table spoons
  • Oil 6 table spoons
  • Salt & Pepper

Method:

  1. Make the omelet with 2 eggs add salt and pepper. Slice the omelet and keep for later use.
  2. Put 1 table spoon of oil in a saucepan and boil, then add the bacon and fry, then add chicken and prawns to this and fry and keep this for later use.
  3. Put soya sauce, tomato sauce to the rice and mix well.  Add the pepper and salt as suiable.
  4. Put 5 table spoons of oil in a sauce pan and boil, and then add the sliced vegetables and fry for 1-2 minutes.
  5. Add the fried bacon, prawns and chicken to this, then add the rice and mix well and take the saucepan out of fire and add the sliced omelet.

Egg Fried Rice

Egg Fried Rice 

Ingredients : (For 8 People)

  • Well cooked rice
  • Salt 5-6 tea spoons
  • Eggs 6-8 (Prepare the omelet and slice in to small pieces)
  • Oil 6-7 Table spoons
  • Soya Sauce 6 Table Spoons
  • Sliced leeks, carrot, celery, onion (each 150g)

Method :

  1. Cook the rice well.
  2. Boil the oil and put the sliced vegetables and fry for 2-3 minutes.
  3. Put the soya sauce to the rice and mix well. Add this to the frying vegetables. Mix well.
  4. Then add the sliced omelet to the rice.

Prawns Temparaduwa


Prawns

How to make Prawns Temparaduwa

Ingredients (For 8 People)

  • ·         Prawns 500g
  • ·         Sliced Onion  60g
  • ·         Sliced Garlic 10g
  • ·         Kottamalli Powder ½ tea spoons
  • ·         Curry leaves 1
  • ·         Cinnamon 1 inch piece
  • ·         Oil 3 table spoons
  • ·         chili powder 3 tea spoons
  • ·         turmeric powder ¼ tea spoon
  • ·         rampe (pandan/screw pine leaves) I inch piece

Method :

  1. Wash the prawns properly.
  2.   Remove the heads and outer skin of the prawns and blend them, squeeze and get the juice of it.
  3. Cut the Onion and Rampe in to small pieces.
  4. Boil the oil in a saucepan and add the rampe and curry leaves. Add the onion and cinnamon and fry until onion becomes light brown colour.
  5. Then add the prawns and other ingredients and cook until the prawns become hard.
  6. Add the earlier prepared prawns juice to this and reduce the fire and cook for further 8 minutes.

Halmesso (Sprats) Temparaduwa


Dried Sprats (Halmesso Temparaduwa)

Ingredients: (For 8 People)

  • Dried Sprats 120g
  • Big onion 110g
  • chili powder 3 tea spoons
  • Curry leaves 3
  • Goraka 2 pieces
  • Chopped Garlic 30g
  • Oil
  • Salt 2 tea spoons

Method :

  1. Remove the heads of the sprats, and wash properly with goraka.
  2. Boil the oil in a saucepan and mix the above ingredients with sprats and cook for 15 minutes with good fire/heat.
  3. After the 1st 5 minutes, reduce the fire/heat and cook further for 10 minutes.

Karawala Temparaduwa


Dried Fish Curries

How to make Dried Fish (Karawala) Temparaduwa

Ingredients (For 8 People)

  • ·         Dried Fish 170g
  • ·         Sliced Onion  110g
  • ·         Sliced Garlic 50g
  • ·         Fenugreek (Uluhal) 1 tea spoon
  • ·         1 Sliced Tomato
  • ·         Oil
  • ·         Cinnamon 1 inch piece
  • ·         Gambooge (Goraka) 1 piece
  • ·         Curry leaves 2
  • ·         Water ½ cup
  • ·         chili powder 1 table spoon
  • ·         Cloves  1
  • ·         Enasal 1

Method :

  1. Cut the dried fish in to small pieces and wash putting goraka to it.
  2.  Boil the oil in a saucepan put all the above ingredients except water and fry for 10 minutes.
  3. Add the water and reduce the fire and cook until the water disappear.

Prawns Biryani (For 8 People)

Ingredients to prepare prawns

  • Prawns - 1 ½ pounds
  • Curd – 3 teaspoons
  • Chillie powder – 3 teaspoons
  • Turmeric powder – ¼ teaspoons
  • Curry powder – 1 ½ teaspoons
  • Garlic – 3 – 4
  • Cashew nuts – 10 – 12
  • Salt – 1 teaspoon
  • Big onions – 3
  • Red onion – 6 (chopped)
  • Curry leaves
  • Rampe – 2 inch piece
  • Cardamom – 10
  • Cinnamon – 2 inch piece
  • Small tomatoes – 3


Steps to prepare the prawns

1.     1. Put 3 teaspoons of curd, chillie powder, curry powder, salt, chopped garlic ginger cashew nuts and prawns to a pan and mix properly.
2.      Put 3 teaspoons of oil in to a pan and heat, when the oil is boiling add onion, curry leaves and other spices and fry. When onion becomes golden color, add the prawn mixture to this. Cut the tomatoes in to small pieces and add. Fry this for 4-5 minutes and keep aside.

Ingredients to prepare rice

  • Rice – 1 pound
  • Red onion (sliced) - 4 ounce
  • Curry leaves
  • Cloves – 5 seeds
  • Oil – 4 teaspoons
  • Cardamom – 5 seeds
  • Cinnamon – 2 inch piece
  • Rampe – 2 inch piece



Steps to prepare the rice

1. Put oil into a pan and boil, then add curry leaves, red onion, spices and fry until onion becomes golden color. Wash the rice properly, drain the water and add. Add water accordingly to the rice amount.

2. When the rice is half cooked, add the prawn mixture to the rice and close the pan with a lid. Seal the edge of the pan stopping air flow in and out of the pan. Keep this in the oven on 300 F temperature for 30-45 minutes.

Chicken Biryani - 2 (For 8 People)

Chicken Biryani - 2 (For 8 People)

Ingredients to prepare the chicken

  • Chicken - 2 ½ pounds (Cut in to small pieces).
  • Curd – 3 teaspoons
  • Garlic – 3-4, sliced ginger pieces – 2, Cardamom seeds – 5-8 [Grind these together]
  • Red onion pieces – 2 ounce
  • Rampe – 2 inch piece
  • Cinnamon – 2 inch piece
  • Sliced tomato – ½ cups
  • Water – ¼ cups (if necessary)
  • Curry powder – 1 teaspoon
  • Salt
  • Big onion slices – ¼ pounds
  • Curry leaves
  • Chopped cardamom seeds – 6-8
  • Cloves
  • Oil – 3 teaspoons


Steps (First cook the chicken)

1. Cut the chicken into small pieces, wash properly and drain the water. Put all the grinded ingredients, curry powder, curd and salt to the chicken and mix. Keep the mixture for 20 minutes.

2. Put the oil in to a pan and heat, when the oil is boiling add curry leaves, red onion slices, cardamom and cloves and fry. Fry this until the onion slices become golden colour.

3. Add the chicken mixture to this. Fry for some minutes. Add the tomato pieces, add water if necessary close the pan with a lid and keep until the meat is properly cooked.

Ingredients to prepare the rice

  • Rice – 2 pounds
  • Curry leaves
  • Rampe – 2 inch piece
  • Spanish turmeric powder – ¼ ounce
  • Oil – ¼ ounce
  • Cardamom seeds – 10 – 15
  • Cinnamon – 2 inch piece
  • (This cardamom and cinnamon should be chopped and tie in small clean piece of cloth. This should be added to the rice)


Steps to prepare the rice

1. Wash the rice properly. Put the oil into a pan and when oil is boiling add rampe, curry leaves, onion and fry until it becomes golden color. Add the washed rice and fry for 5-7 minutes.

2. Add 8 cups of water and put the cloth tied with cinnamon and cardamom earlier.
Cook the rice properly and then add the chicken pieces. Add small amount of spanish turmeric powder in to the middle of the rice. Close the pan with a lid and seal it (Sealing the pan will stop flowing the air in and out of the pan). Keep the oven inside the oven for 30 – 45 minutes.
